Roasted Kabocha Squash with a sprinkle of Veggie Bacon Savory Pepitas.



Ingredients:

Chop an onion and 1/2 a kabocha squash and place in a Pyrex or ceramic dish.

Add 2-3 tbsp Soy Sauce or Tamari

1 tbsp of toasted sesame oil

1 tbsp real maple syrup, and a squeeze of Sriracha or any chili paste, to taste. Mix and pour over veggies.

Add a half cup of water to the pan. Mix again. Add a little salt if you please.

Broil veggies and stir every 6-8 minutes, and they will cook in 20-22 minutes.

Pull the Roasted kabocha squash out of the oven and dish it up.

I personally like to put a little dab of mayo and kimchi on mine.
